Lebkuchen – Christmas biscuits originally from Nürberg, Germany. Its base is a syrup of honey, sugar, eggs and butter. This recipe for lebkuchen contains ginger and cayenne pepper.
Ingredients:
240 g dark chocolate
30 g butter
0.75 cups walnut halves
1 cup peeled almonds
1 tablespoon butter
For the dough:
100 g butter
2/3 cup fine brown sugar + 3 tablespoon for sugar powder
1 egg
0.3 cups honey
3.5 cups wheat flour
1 tablespoon baking powder for dough
1 teaspoon ground ginger
0.5 teaspoon ground cloves
a pinch of cayenne pepper
Instruction:
1. Prepare the dough. Beat butter with sugar and egg, add honey.
2. Pour the sifted flour, baking powder, ginger, cloves and cayenne pepper into a bowl. Beat the dough with a mixer.
3. Roll a 20 cm long sausage out of the dough. Place in the fridge for 30 minutes. Grease two baking sheets with oil. Cut the sausage into 20 1 cm thick circles and place on baking sheets. Bake in turn in an oven preheated to 180°C, 10 minutes, let cool.

4. Break the chocolate into pieces and melt in a water bath. Add butter and stir well. Cut the candied cherries into wedges. Coat the cookies with chocolate. In the middle of each press a half of a walnut, spread slices of cherries and almonds around.
