Cookies “Lemon Crescents”

Cookies “Lemon Crescents”

A spectacular appearance and a fairly simple execution of baking or dessert are especially important on the eve of the holidays, when time is short, and you really want to please and surprise your loved ones.

Ingredients:

For glaze:

125 g icing sugar
3-4 teaspoon lemon juice

For dough:

2 egg whites
1/2 lemon lemon zest
1/2 lemon lemon juice
250 g sugar
300 g almond flour

Instruction:

1. Whisk egg whites until firm peaks. Add the zest and lemon juice. Mix almond flour with sugar. Then mix both mixtures gently.

2. Wrap the finished dough in foil and refrigerate for an hour.

3. Roll out the dough 0.5 cm thick on a surface sprinkled with powdered sugar. Cut out half moons with a mold (each time dip the mold in powdered sugar so that it does not get stuck in the dough) and transfer to a baking sheet lined with parchment. Bake in an oven preheated to 160 C for 15-20 minutes.

4. Mix the powdered sugar and lemon juice thoroughly. Apply the resulting glaze in a thin layer on completely cooled cookies, let dry.
